Sweet potato Pulusu






 Pulusu is one of the South-Indian main dishes that tastes very well with the rice .This can be made with lot of variations like brinjal , ladies finer , drumsticks , ivy gourd and many as well . This is one of those which gives the tangy and little sweet taste and when these both combined with onions , aroma of spices and flavors of coriander  makes the dish more delightful .

Ingredients:

  • Sweet potato : 1(cut into circles)
  • Tamarind : lemon sized ball
  • Onions : 2 (cut length -wise)
  • Tomato : 1
  • Green chillies : 2-3
  • Mustard : 1 tspn
  • Cumin : 1 tspn
  • Urad dal ; 1 tblspn
  • Curry leaves : 6-7
  • Salt : as required
  • Jaggery ; 1 tspn
  • Oil : 1 tblspn
  • Asefoetida (Inguva) : pinch 
  • Turmeric : pinch
Making Pulusu Powder:
  •  Dried red chillies : 3
  • Chana dal : 1 tblspn
  • Urad dal : 1 tblspn
  • Dhania ( coriander seeds) : 1/4 tblspn
  • Roasted gram : 3 tblspn
  • Oil : 1/2  tblspn
Fry all the spices in oil till their color changed to light golden brown ,cool it and grind to a fine powder .Can store it in a air-tight container for further use also.

Procedure 1:
  1. Soak the tamarind and extract two cups of  tamarind juice from it.
  2. Heat oil in a pressure cooker , add mustard , cumin ,urad dal , asefoetida ,turmeric , onions ,tomato ,green chillies (split into half) , and fry for one minute.
  3. Add sweet potato , tamarind juice and pressure cook for one whistle.
  4. Add  2-3 tblspns of pulusu powder  to a little water to make a fine paste.Add this paste to the tamarind juice (pulusu). Stir well.
  5. Add salt , jaggery , curry leaves to tamarind juice , mix well and cook for 5 more minutes.Ganish with coriander leaves.
  6. Serve hot with rice.
Procedure 2:

  1. Saute the onions , tomatoes , green chillies , turmeric in a pan tampered with the spices.
  2. Then add the tamarind juice to it ,bring it to boil .
  3. Add boiled sweet potato ,  salt ,curry leaves , pulusu powder same as in  the above procedure ,jaggery cook for 5 more minutes and garnish with coriander leaves.
